For whatever reason, I’ve been craving the crunchy texture of chopped slaw, so I made up a healthy, Asian-inspired version of the staple cole slaw.

I didn’t measure the ingredients, so just mix the dressing to your taste.

Vegetables:

Red cabbage
Celery
Carrots

Also added:

Raw pumpkin seeds - soaked and dehydrated

Dressing:

Extra virgin olive oil
Raw honey
Raw apple cider vinegar
Garlic
Sea salt
Black pepper

Toss the vegetables in the dressing, add the pumpkin seeds and crunch away!
